Winemaker Notes
From a south-facing single-vineyard in the commune of Vaulicheres, east of Chablis. Two thirds of the fruit is barrel-fermented and aged, the remaining fruit is in tank.
There’s a hint of green here, but in a pleasant way, like a bit of salad with your steak to freshen. Ripe, round, fleshy with peach and kiwi, whilst maintaining a lovely mineral focus. Canadian born but Chablis grown Patrick Piuze has come through with his slew of new releases and they are simply stunning. The Bourgogne Tonnerre is no exception. The fruit comes from "Les Boutots", located in the village of Vaulicheres, just east of the village of Chablis.
Highly expressive, with layers of aromatic exotic citrus and orchard fruits. "Les Boutots" is refreshing, vibrantly acidic, and glides effortlessly on the palate.
